It could not be easier. With no cooking required, this is an extremely easy recipe that comes together in under five minutes – no, I’m not exaggerating. All we’re doing is combining the ingredients in a small bowl, stirring, and you’re done.
Preparation Process
Could not be simpler. Grate a bit of roasted garlic and fresh ginger, then stir them into your preferred brand of soy sauce with rice vinegar and brown sugar. And that’s it. The sauce is ready to use and can be stored in the fridge in an airtight container for up to two weeks.
Pairings for Homemade Teriyaki Sauce
Anywhere you would use regular teriyaki or soy sauce.
- Baked or Fried Tofu. For either fried tofu or baked, today’s homemade teriyaki sauce would be a delicious pairing.

Homemade Teriyaki Sauce – Ingredient Checklist
- ½ cup low-sodium soy sauce
- Note: Your preferred type and brand of soy sauce. No need to fuss over this.
- Tip: I will say that I think low-sodium soy sauce helps to keep the saltiness in check, but you could always balance out the saltiness with a little extra brown sugar and/or vinegar.
- Substitution: Use tamari as a gluten-free option. That said, soy sauce is’ the base of this recipe, so substituting with anything other than tamari is going to be tricky and imperfect.
- ½ cup rice vinegar
- Note: My go-to vinegar for these types of recipes is rice vinegar, due to its much more mellow tang and flavor-neutral quality.
- Substitution: As I’m fond of saying, there’s no sense in fussing over vinegars, as most vinegars can indeed stand in for other types of vinegar. If all you’ve got on hand is apple cider vinegar or white wine vinegar, go for it.
- ¼ cup dark brown sugar
- Note: I’m opting for dark brown sugar to give it a rich, molasses-like sweetness and texture.
- Substitution: Feel free to use light brown sugar or honey, but the sauce will be slightly lighter in flavor and appearance.
- 1 clove roasted garlic, grated
- Tip: We’re roasting the garlic to mellow its intensity, bring out its natural sweetness, and to give it some smoky depth.
- Can I Skip Roasting the Garlic? Absolutely, but the sauce will have a much stronger garlicy flavor and a sharper bite.
- ½-inch fresh ginger root, grated
- Tip: Fresh ginger is a key ingredient here. It brings warmth and zing and bright freshness. This is one ingredient that you really can’t skip in this recipe.
- Can I use ground ginger? Not really. Ground ginger is for baking, and has none of the bite or brightness of its fresh counterpart.

Tips for Preparing Homemade Teriyaki Sauce
- Use fresh garlic and ginger.
- I cannot stress enough how important fresh garlic and fresh ginger are to this simple recipe. All of the bright and zesty notes come from the fresh ginger. Meanwhile, all of the smokiness and garlicy goodness comes from the roasted fresh garlic. These qualities simply cannot be properly replicated with either ground ginger or powdered garlic.
- Simmer for a thicker sauce.
- While I’ve skipped this step, if you prefer a thicker, glaze-like teriyaki, pour the sauce into a small saucepan and simmer over medium-low heat for 5–10 minutes until slightly reduced. Stir occasionally to prevent burning.
- Taste and adjust.
- Taste as you go. This is probably my number one kitchen tip. You taste as you go to find the right balance of sweet, salty, and umami that fits your palate. Add a pinch more brown sugar to balance saltiness, or a bit more vinegar for added tang, or more grated garlic for added bite.
- Double or triple the batch for meal prep.
- This sauce keeps well in the fridge for up to two weeks in an airtight container, and scales up at a perfect one-to-one ratio, which means you can make this in big batches to have on hand throughout the week.
- Add sesame oil or chili flakes for variation.
- For extra depth, stir in half a teaspoon of sesame oil. For heat, add a pinch of red pepper flakes or a dash of chili crisp to make a spicy teriyaki variation.
